Super Easy 8 Minute CheesecakeJuly 29, 2007 It’s true, I’m ridiculously bad when it comes to baking, which is why I decided to try making a no bake cheesecake this time around. I’ve tried a couple of other recipes for cheesecakes that require a lot of time, and honestly I’ve just never been impressed with the flavor of the cake. Last night I found a site offering a cheesecake cookbook chock full of a variety of cheesecake recipes. I tried my hand at what looked like the most straightforward recipe in the book, which is their 8 Minute Cheesecake. The ingredients are simple, and come on, it only takes 8 minutes! Amazingly enough, I found that it really only takes about five minutes to make this cheesecake, so I decided to make two while I had all of the ingredients out on the table, one topped with fresh strawberries and the other with raspberries.
I whipped up the filling for the cakes, spooned it into a couple of store bought graham cracker crusts, and popped them in the fridge for a few hours. I was kind of skeptical at first as to how well the filling would set up while chilling, and I wondered if it would be a sloppy mess later when I tried to cut slices, but it actually turned out really nice texture wise. The cheesecake is light, fluffy, and sweet. It does not have the depth of taste that a baked cheesecake has, but actually, I think I prefer the cool and refreshing no-bake method. And not just because I always screw it up the other way! This cheesecake would be perfect for summertime events, like family reunions or a get together with your friends. I’m always stumped as to what kind of dish to take when asked to carry-in. To be perfectly honest, I usually just pick up a pie from the grocery store, rip off the label, and hope no one asks for the recipe. It’s nice to have a quick and easy dessert recipe that I prepare when I’m in these situations now.
I actually made these cheesecakes today at my mother’s house, while I was doing a little laundry. My dad was anxious to taste them all day, so I had to appease his hunger with a spoonfull of the filling as I filled the second crust. I knew that they were going to be absolutely delicions when he took the bowl after I was done and scraped every last creamy bite from the sides and ate them, each mouthful followed with several: “Mmmm!” noises.
The anticipation was met with delight by all (me, my mom, and my dad) and after a few hours chilling we cut into those bad boys! Like I said earlier, they are really light and fluffy, almost like a cheesecake flavored cream pie. I think that I will experiment with some different toppings next time, though. The fresh berries were really good, but I think that a thicker top layer, maybe cherry pie filling, would be excellent as well. My mom was even saying though that the cheesecake itself has such a nice flavor that it would be great alone. There are really countless variations that you could come up with. I ended up leaving what was left of the strawberry cheesecake with my mom and dad, and I brought the rest of the raspberry one home so Zach could try it. He really liked it too, and he’s kind of hard to please when it comes to food, because he grew up with a mother and grandmother who cooked and baked for him all the time. Thumbs up all around on this one! I definitely need to plug the book where I found this recipe, because I’m so pleased with this one that I want to try the other 90 recipes inside. It’s called 91 Cheesecake Recipes. What makes it nice is that it’s just full of great recipes in a clean, easy to read format. There really isn’t a lot of room for error, because the recipes are written step by step, with care to make sure that kitchen klutz’s like myself can figure it out! It’s such a pain to find good recipes on the Web sometimes, so it’s really worth the money to have this great resource in your cookbook collection.
